Why do we at Ignite Unlocking Potential train our staff with the ITC Level 2 Food Safety in the Outdoors course?

As a Forest School & Outdoor Learning specialist we train teachers and other professionals in Forest School Pedagogy. As a professional or enthusiastic learner we will help you to achieve the highest standards in Outdoor Learning. Our courses are designed to help you achieve outdoor excellence and deliver practice that far exceeds any minimum standards that apply in our field.

We love cooking in the outdoors and more importantly so do the groups we work with. We prioritise cooking as part of fulfilling Maslow’s Hierarchy of needs to ensure engagement in learning, to develop an awareness of healthy eating, as an essential lifeskill,  as a fun way to engage pupils in cross curricular and LNF activities such as measuring & ratios and most importantly to simply enjoy cooking and eating healthy food!

We use cooking in most of our every day work at Ignite Unlocking Potential from our Ladybirds Parent & Toddler group (pictured above), John Muir award programmes, Forest School training and in school FS projects, Holiday camps and DofE groups. Our go to qualification for staff has always been the CIEH Level 2 and it still is however, after using the ITC version that we have adapted to the ‘Outdoors’ we will never go back.

The outdoor format is directly applicable to our unique role of Learning Outside of the traditional ‘four walled’ classroom. We do not usually cook indoors, we cook in the great outdoors and the difference is stark! Wind, rain, flying insects, birds and the challenges of temperature control on an open campfire to name but a few.

This course is designed to balance the theory of food safety with the practical skills of cooking a 3 course lunch in the outdoors, developing good practice guidelines in a practical, fun, engaging and interactive manner.
